How To Make an Oreo Cream Cake

Prepare the Best Special Chocolate Cake , the Simple Syrup and the Swiss Meringue Buttercream a head of time.  Crush about 50 Oreo® cookies in the food processor.  Cut in half another 5 Oreo cookies. For the chocolate cake, take the dome off and slice the layers in half so you have a total of 4 cake layers.

 To assemble:

Place a dab on icing on the cake board.  Place a cake layer on top and moisten with simple syrup. Spread a layer of buttercream and top with a layer of crushed Oreo cookies.

Place a second cake layer on top and moisten with simple syrup. Spread a layer of buttercream and top with a layer of crushed Oreo cookies. Place a third cake layer on top and moisten with simple syrup.

Spread a layer of buttercream and top with a layer of crushed Oreo cookies. Place a last cake layer on top and moisten with simple syrup, notice that the top of the cake should be a pan bottom side because it has a square edge and this will make a better presentation. I am going to ice this cake with a cake icer tip.

Place the toothed side towards the cake, squeeze the bag and rotate the turntable to apply the icing. Do the sides and the top.  Alternatively, you can ice the cake the traditional way by putting icing on with a spatula.

After you are done applying the icing with the icer tube, use an icing spatula to smooth the icing. To square the sides of the cake up, use a bench scraper to smooth.

Press crushed Oreos onto the side of the cake. Pipe 8 buttercream rosettes and top each with a half Oreo cookie.

Sprinkle some crushed Oreos between the rosettes.  Enjoy!
